You won’t find Plate Short Ribs very often here in Canada, but this massive beef bone is becoming the new hot ticket item in the Texas BBQ community, becoming known as the “New King of BBQ”. Smoked for over 8 hours, this cut is beautifully marbled with fat and practically falls off the bone. The flavour is incredibly rich and beefy, with a slightly firmer texture to brisket.
